• 1 orange
• 10ml olive oil
• 60ml freshly squeezed lemon juice
• 15ml honey or sugar
• A dash of salt and pepper
• 15ml fresh thyme, finely chopped
• 1 clove crushed garlic
• 5ml chilli flakes
• 5 chicken breasts (bone and skin on)
• 8 sweet potatoes (medium sized)
• 1 onion (cut into 8 pieces)
• Sunflower oil for frying
• Squeeze the juice from one orange half, cut the other half in slices.
• Mix marinade ingredients, including the orange juice (not the slices).
• Pour marinade mixture over chicken in a shallow dish and marinade for 20 minutes.
• Cook sweet potatoes in the microwave for 10minutes, until softened. Remember to prick with a fork.
• Cut 5 slits into each sweet potato.
• Remove chicken breasts from the marinade and pat dry using paper towels, reserve the rest of the marinade.
• Heat the oil in a large frying pan and brown chicken on both sides.
• Sautè the onions using the same pot, while preheating the oven to 200°C.
• Arrange the chicken breasts, onion and sweet potatoes in a large baking tray and pour over the marinade.
• Scatter orange slices and bake for 45 minutes.
• Serve hot.
